Elevate your breakfast and baking with a homemade pineapple jam that promises superior taste and texture compared to store-bought alternatives. This recipe emphasizes the use of fresh, natural ingredients, eschewing artificial flavors and preservatives for a pure fruit experience.
The jam is incredibly versatile, ideal for spreading on warm toast or scones, and serves as a fantastic filling for cakes and pastries.
To prepare approximately 1kg of jam, you will need 3kg of pineapple (peeled and cored), the rinds, seeds, and juice of two medium lemons, 500g of sugar, and clean water. Ensure you have 2-3 sterilized glass jars with screw-top lids ready for storage.
The process begins with sterilizing your jars and lids. While the jars are in a pre-heated oven at 135°C for 10 minutes, boil the lids for 10 minutes. Grate the lemon rind, extract the juice, and boil the seeds in half a liter of water for an hour, then strain and adjust the liquid to half a liter. Crush the pineapple chunks in a food processor or blender.
Combine the crushed pineapple, lemon juice, rind, and lemon-seed water in a large saucepan. Bring to a boil, then simmer for 25 minutes until the pineapple is soft. Stir in the sugar over low heat until dissolved. Increase the heat and boil rapidly for 20-25 minutes, stirring frequently, until the jam reaches its setting point. Test this by placing a small amount on a chilled saucer; if it wrinkles when pushed with a fingertip, it’s ready.
Allow the jam to cool slightly before carefully pouring it into the sterilized jars. Once completely cooled, store the jam in the refrigerator. Other fruits like mangoes, guavas, and gooseberries can also be used to create delicious homemade jams.
