Coleslaw, a dish with roots in the Dutch “koolsla” meaning cabbage salad, is a versatile and refreshing side. Its name hints at its primary ingredient, but it often includes a colourful array of other raw vegetables.
This recipe calls for a base of green and red cabbage, complemented by grated carrots, finely sliced red onion, and diced red and green bell peppers. Freshly chopped coriander adds an extra layer of flavour.
The dressing is key to a great coleslaw. This version features mayonnaise and Greek yoghurt for creaminess, balanced with honey for sweetness, lime juice for tanginess, and a hint of garlic and salad seasoning for depth. Salt and black pepper are added to taste.
Preparation involves making the dressing first and chilling it while the vegetables are prepped. The shredded and grated vegetables are combined, chilled, and only tossed with the dressing just before serving to maintain maximum crunch.
This coleslaw is an ideal accompaniment to grilled meats, sandwiches, or as a bright addition to any family meal.
