Kampala’s culinary scene is about to get a taste of elevated African cuisine. Mozambican chef Marcelino Dgedge, renowned for transforming familiar ingredients into sophisticated dishes, is the next guest at The Singleton Chef’s Table. The event, a stylish dining experience blending fine dining with The Singleton whisky and inventive cocktails, will take place on May 26.
Dgedge, who moved from electronic engineering to pursue his passion for food, emphasizes a philosophy of “less is more,” honed by his training in Italy. He believes that African staples like cassava, peanuts, and local greens deserve the same esteem as luxury ingredients found in European cuisine.
“Cassava is king,” Dgedge states, highlighting the root’s incredible versatility.
