On March 26, French Ambassador Virginie Leroy spoke at a special dinner held at Cantine Divino in Kampala, exploring the enduring appeal of French cuisine. Recognized by UNESCO as an intangible cultural heritage, it embodies transmission of knowledge, regional terroirs, and an art of living that transcends borders.

Leroy noted that French cuisine invites people worldwide to adopt and adapt it, promoting shared meals that build bridges and understanding. She linked it to Francophonie ideals like solidarity and dialogue, extending beyond food to table settings, porcelain, crystal, and attentive hospitality.

The cuisine’s roots trace to the Middle Ages, evolving dramatically during the Renaissance with introductions like sugar and butter, thanks to influences from Catherine de’ Medici’s Florentine cooks. Louis XIV’s Versailles era elevated it to international fame in the 17th century.

The Enlightenment treated food as an intellectual pursuit, while the 1789 Revolution democratized it through restaurants and accessible bourgeois cookbooks featuring dishes like coq au vin and béchamel sauce.

In the 19th century, figures like Marie-Antoine Carême and Georges Auguste Escoffier systematized haute cuisine, with Escoffier’s innovations including the soufflé and his influential Guide Culinaire. Le Cordon Bleu school emerged then too.

The 1960s brought nouvelle cuisine, led by critics like Henri Gault and Christian Millau, favoring lighter, innovative dishes and inspiring molecular gastronomy.

This event underscored how French culinary traditions continue to unite people globally, from Versailles to Kampala.
